Parmesan Polenta Chips

These easy homemade crispy parmesan polenta chips are a crowd favourite!
½ Cup Instant Polenta
2 Cups of water
Chicken/Vegetable stock to taste
150g Parmesan Reggiano
Fresh or dried garlic and herbs to taste
Drizzle of Extra Virgin Olive Oil
Drizzle of Truffle oil (optional)
Line a deep tray with baking paper
Add water, stock, garlic and herbs to a pot and bring to boil
Reduce heat and add Polenta to the water, stirring constantly for 3-5 minutes until thickened
Stir in Parmesan to taste and spread Polenta on the lined tray, let cool for 1-3 hours until set
Preheat oven and tray to 200 degrees
Cut the set Polenta into 2cm wide chips. Coat the cut chips with dry polenta
Generously grate a bed of Parmesan over the pre-heated tray and place the coated chips on top
Drizzle with oil and salt and bake for 20 minutes or until golden
Garnish chips with shaved parmesan and herbs and serve
To mix it up, drizzle with Truffle oil for Truffle Parmesan polenta chips!
